I made this courgette lasagne last night and it was simply delicicious, even Pete went back for seconds. Luckily there is still enough for me for lunch today. As always I used what I had in the fridge, so quark and cheddar instead of the cheese the recipe says, and a tin of tomatoes with a tablespoon of walnut pesto instead of a ready made pasta sauce. However, reading the comments, you can use pretty much anything you like. I am about to go on leave from work for 11 days and I really cannot wait. I will spend some time at the allotment and some walking and playing with Alfie. One of the discovered joys of living on the boat is how simple life becomes. You cannot 'just do a bit of ironing' or some other chore, housework takes all of ten minutes. After that I am free to do whatever I like, I have even caught up on some reading. Have a good Easter weekend and hopefully you too can enjoy some simple and relaxing living.

ReplyDeleteLooks and sounds delicious, Fran! But when oh when did housework on a boat only take 10 minutes?? It takes me hours to get things clean because not only is there the inside to purge of the dust, dog hair and city grime, but I also have to do the outside too! Now when do you go and scrub the bricks of your house, I ask? I spent three hours this morning washing and scrubbing the barge, only to know that it will be just as bad in 48 hours.

ReplyDeleteVal - Oh Val, that sounds horrendous! I am talking about on the yacht, We don't have as much stuff and what we do is mostly put away, and there are only little floor areas to keep clean etc. I know that when we get on to the barge you are right, inside and out. I wonder if I could get a barge cleaner, as I am really a secret slut!
